The iconic Hydro-Majestic Hotel in the Blue Mountains have an exciting new opportunity for an experienced and passionate Senior Sous Chef to join our team at the Wintergarden Restaurant. As a member of our Salter Brothers Hospitality team, you’ll play a key role in creating meaningful experiences for both our guests and teammates through thoughtful service, attention to detail, and a commitment to continuous improvement.
About The Hydro-Majestic Hotel
The Hydro Majestic is an iconic and historic hotel stretching 1.1 kilometres along the escarpment edge of the spectacular World Heritage-listed Blue Mountains, overlooking the Megalong Valley.
Just one hour and 45 minutes drive from Sydney, the Hydro Majestic features art-deco inspired accommodation and is an unrivalled escape into the luxury and grandeur of yesteryear. Our multiple food & beverage outlets include the Boiler House, Wintergarden Restaurant, Salon du The, The Pavilion Cafe, and the Belgravia Bar & Lounge.
The role and key duties
- Be a leader in kitchen operations - running the shift including when Executive Chef is on shift;
- Maintain clear and concise communication with the Hotel leadership team and communicate across departments to ensure the guest experience is enhanced;
- Deliver quality food through taste & presentation which represents value for money & consistently exceeds guest expectations;
- Training, coaching and development of team members skill sets, ensuring a high level of performance and ability to work together effectively;
- Assist with the hiring of team members who align with our vision and values and as well as possess relevant capabilities to meet job requirements;
- Maintain operational and labour costs as directed by the Executive Chef, ensure optimum ordering of food stock & accurate stocktakes and manage wastage and portion control effectively to keep costs in line with budgets;
- Collaborate with the Executive Chef in creating and updating the menu, conducting menu tastings and train FOH team on food;
- Operate and maintain all department equipment and report any problems;
- Always ensure compliance with the provisions of the Workplace Health and Safety Act and Regulations;
- Effective systems of quality control for kitchen operations & food safety;
- Willingness to assume responsibility for the overall kitchen operation.
Essential criteria required to be considered
- Chef trade qualification (essential);
- Extensive experience as a Sous Chef within a high end, hatted, fine dining or la carte restaurant environment (essential);
- Leadership experience managing and developing teams;
- Strong knowledge of culinary techniques and trends, and commitment to maintaining high standards of food quality and hygiene;
- Excellent communication, organisational and multi-tasking skills;
- Ability to work under pressure and in a fast-paced environment;
- Ability and willingness to commence work on a rotating roster including weekends and public holidays;
- Reliable vehicle to get to and from the retreats;
- Located close to our restaurant or a willingness to relocate.
