The Role 

We have an exciting new opportunity for a Head Chef to join the team at The Convent Hunter Valley, located in the heart of Pokolbin.

About The Convent Hunter Valley

With 19 intimate guest-rooms and suites, The Convent offers a range of accommodation options to meet the needs of every guest, each of which has been lovingly crafted to embrace you in the comforts of a grand manor house.

A short stroll down the tree-lined driveway is Circa 1876, located in an historic cottage on the picturesque grounds of Roscrea Estate. Circa 1876 quite literally brings the ‘farm to fork’ ethos to life as guests overlook the organic kitchen garden.

Here's what you'll do

  • Lead and inspire the kitchen team to provide a quality and profitable dining experience that is in line with the vision of the restaurant;
  • Coach and mentor the kitchen team to develop their knowledge, passion and taste for excellence.
  • Lead by example to ensure the overall guest experience exceeds expectations;
  • Design and execute menus for breakfast, lunch, dinner and events;
  • Be a key member of the management team and work closely with the General Manager to ensure the overall success of your team and the retreat;
  • Build our reputation for unforgettable dining and grazing experiences
  • Explore new F&B opportunities for the venues alongside the General Manager and Restaurant Manager;
  • Deliver on efficiency, budgets and product delivery standards;
  • Drive continuous improvements that support profit and reputation growth;
  • Sound business acumen and strong operations;
  • Work with gardener to manage our onsite harvest garden, ensuring sustainability is top of mind.

This is how you’ll know you’re right for this role

  • Extensive experience in a Head Chef or Executive Chef role within a high end, fine dining or hatted restaurant environment;
  • Experience in designing creative, innovative and award-winning menus;
  • A solid knowledge of the current local market and trends;
  • A proven track record of sourcing and producing the highest quality of food with knowledge of the local market and trends;
  • A strong level of financial acumen to be able to confidently run a profitable and efficient kitchen. i.e. COG's, Labour %, all round budget management;
  • Strong communication skills with an eye for detail.
  • Experience in leading and motivating a high performing kitchen team with a commitment to their training and development;
  • Located close to our restaurant or a willingness to relocate;
  • A passion for people, food and wine;
  • Reliable car and drivers license.
