Ardour Milton Park Bowral have an exciting new opportunity for a Bar Manager to join our passionate team in Bowral, Southern Highlands. In this role, you will be managing the exclusive Polo Bar, an intimate and refined bar experience within the hotel. As a member of our Salter Brothers Hospitality team, you’ll play a key role in creating meaningful experiences for both our guests and teammates through thoughtful service, attention to detail, and a commitment to continuous improvement.

Milton Park Country House Hotel & Spa in Bowral, NSW, has undergone a $10 million transformation and recently reopened in February 2026 as Ardour Milton Park Bowral, the very first flagship in our new Ardour Hotels & Estates collection.
Nestled on a secluded hilltop woodland just under two hours from Sydney, Ardour Milton Park Bowral is a luxury escape like no other. The role and key duties
- Curate an unforgettable and personalised experience for our Polo Bar guests from start to finish;
- Forge loyal relationships with guests and locals to promote repeated clientele, maximize and identify opportunities to sell products & experiences that suit the needs of our guests;
- Lead and inspire a team of dedicated bar staff, providing guidance, training, and performance feedback; including coaching of your team to uphold service and quality standards;
- Curate cocktail and wine lists suitable for a high-end bar environment;
- Perform stocktakes, inventory management, manage wastage and control costs in order to optimise profitability;
- Ensure compliance with health and safety regulations and company policies throughout the venue.
Essential criteria required to be considered
- Minimum 2 years’ experience in a leadership role within a premium, cocktail, Hotel, or high-end bar environment;
- RSA certificate and NSW competency card (essential);
- Proven leadership skills with the ability to motivate and develop your team;
- Strong understanding of bar operations, food & wine, and expert knowledge of cocktails;
- A genuine love for hospitality and a passion for creating memorable guest experiences;
- Demonstrated ability to manage budgets and inventory management;
- A confident and outgoing personality with a talent for customer service.
