The Role
Bannisters Port Stephens have an exciting new opportunity for a full-time Apprentice Chef (1st, 2nd or 3rd year) to join the team at our iconic oceanfront hotel, including outlets such as Cheeky Dog, Julio's and Rick Stein. As a member of our Kitchen team, you will be responsible for bringing our core values of Caring, Elevated, Progressive and Curious to life for both our team and our guests.

Located on Soldiers Point peninsula, the latest addition to the Bannisters brand is newly constructed and draws upon our strong food tradition. Our outlets feature the approachable fine dining of Rick Stein’s seafood restaurant and contemporary authentic Mexican dishes from Julio’s alongside delicious cocktails by the pool. You will be joining a strong, enthusiastic team who are striving to excel and position Bannisters Port Stephens as a flagship in the region.
The role and key duties
- Deliver our inhouse dining menu inspired by local ingredients, prepared utilising creative preparation techniques;
- Curating an unforgettable and personalised experience for our guests from start to finish;
- Participate in menu planning and development, contributing creative ideas;
- Learn and apply various cooking techniques and culinary skills;
- Help with the daily mise en place, ensuring all ingredients are prepped and ready for service;
- Maintain a clean and organized kitchen environment, adhering to food safety and hygiene standards.;
- Support the team during service, ensuring smooth and efficient operations;
- Receive ongoing training and mentorship to develop your culinary expertise;
- Collaborate with the front-of-house team to ensure a seamless dining experience for our guests.
Essential Criteria to be considered
- Currently enrolled and completing a Commercial cookery qualification (essential).
- Basic knowledge of kitchen operations and food preparation;
- Strong work ethic, attention to detail ability to work in a kitchen environment;
- Flexibility to work various shifts, including evenings and weekends;
- Located close to our restaurant or a willingness to relocate.
- Reliable vehicle to travel to and from work.
